FIRST COURSE Choices:
Pan-seared duck foie gras served with honey raisin demi-glace and drizzled with lingonberry coulis.
OR
Traditional bisque with leeks, lobster, cream and Cognac.
OR
Avocado stuffed with lump crab meat, grapefruit, fresh herbs, lemon juice.
Organic spring mix, Belgian endive, blue cheese crumbles, candied walnuts, pomegranate arils, and Dijon vinaigrette.
THIRD COURSE Choices:
Filet Mignon topped with foie gras, mushroom duxelle, wrapped in pastry and served with Cognac pink peppercorn sauce.
OR
Baked in 9-oz lobster tail served with Arborio gruyère risotto, vanilla beurre blanc.
OR
Half roasted duck served with black cherry Vermouth coulis.
FOURTH COURSE: Les Desserts ou fromage
French King's cake puff pastry filled with almond cream, crème anglaise.

Vanilla bean poached pear, vanilla ice cream, dark chocolate ganache, Chantilly whipped cream, toasted almonds.
